  • Salt to taste
  • 1 avocado, sliced (for serving)
  • Salsa (for serving)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper. Sauté until soft.
  3. Add black beans, corn, cumin, chili powder, and salt. Stir to combine and heat through.
  4. Place the mixture on one half of a gluten free tortilla.
  5. Fold the tortilla over and cook in the skillet until golden brown on both sides.
  6. Repeat with remaining tortillas and filling.
  7. Serve with avocado slices and salsa.
