A delicious vegan quesadilla recipe that is gluten free and easy to make.
Ingredients

- 1 cup gluten free tortillas
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 small onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon olive oil
- Salt to taste
- 1 avocado, sliced (for serving)
- Salsa (for serving)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper. Sauté until soft.
- Add black beans, corn, cumin, chili powder, and salt. Stir to combine and heat through.
- Place the mixture on one half of a gluten free tortilla.
- Fold the tortilla over and cook in the skillet until golden brown on both sides.
- Repeat with remaining tortillas and filling.
- Serve with avocado slices and salsa.
Notes
- Use any type of gluten free tortilla.
- You can add other veggies as desired.
