A delicious vegan quiche that is gluten-free and egg-free.
Ingredients

- 1 cup gluten-free flour
- 1/4 cup nutritional yeast
- 1/2 cup almond milk
- 1/4 cup olive oil
- 1 cup chopped spinach
- 1/2 cup diced bell pepper
- 1/2 cup sliced mushrooms
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix gluten-free flour, nutritional yeast, garlic powder, onion powder, salt, and pepper.
- Add almond milk and olive oil to the dry ingredients and mix until smooth.
- Fold in chopped spinach, bell pepper, and mushrooms.
- Pour the mixture into a greased pie dish.
- Bake for 30-35 minutes or until firm and golden.
- Let it cool for a few minutes before slicing.
Notes
- Store leftovers in the refrigerator.
- Feel free to add other vegetables.
- Can be served warm or cold.
