Description

Vegan shakshuka is a flavorful dish made with tomatoes, bell peppers, and spices, served with eggs or tofu.


Ingredients

  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin

  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • 46 eggs or 1 block of firm tofu, crumbled
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper, sauté until soft.
  3. Stir in garlic and spices, cook for 1 minute.
  4. Add diced tomatoes and tomato paste, simmer for 10 minutes.
  5. Make wells in the sauce and crack eggs or add crumbled tofu.
  6. Cover and cook until eggs are set or tofu is heated through.
  7. Garnish with parsley and serve hot.
