Description
Vegan shakshuka is a flavorful dish made with tomatoes, bell peppers, and spices, served with eggs or tofu.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 can (14 oz) diced tomatoes
- 1 tablespoon tomato paste
- Salt and pepper to taste
- 4–6 eggs or 1 block of firm tofu, crumbled
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper, sauté until soft.
- Stir in garlic and spices, cook for 1 minute.
- Add diced tomatoes and tomato paste, simmer for 10 minutes.
- Make wells in the sauce and crack eggs or add crumbled tofu.
- Cover and cook until eggs are set or tofu is heated through.
- Garnish with parsley and serve hot.
