Ingredients

- 2 cups fresh spinach
- 1 cup vegan cheese
- 4 whole wheat tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Wash and chop the spinach.
- In a bowl, mix spinach, vegan cheese, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a pan over medium heat.
- Place one tortilla in the pan and spread the spinach mixture on half of it.
- Fold the tortilla over and cook until golden, about 3-4 minutes.
- Flip and cook the other side until golden.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
