Vegan spinach quesadillas are a delicious and healthy meal option filled with nutritious spinach and dairy-free cheese.


Ingredients

  • 2 cups fresh spinach
  • 1 cup vegan cheese
  • 4 whole wheat tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Wash and chop the spinach.
  2. In a bowl, mix spinach, vegan cheese, garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Place one tortilla in the pan and spread the spinach mixture on half of it.
  5. Fold the tortilla over and cook until golden, about 3-4 minutes.
  6. Flip and cook the other side until golden.
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve warm.
