Ingredients

  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems.
  3. Chop the mushroom stems and set aside.
  4. Heat olive oil in a pan over medium heat.
  5. Add onion, bell peppers, and garlic; sauté until soft.
  6. Add chopped mushroom stems and spinach; cook until spinach wilts.
  7. Stir in breadcrumbs and nutritional yeast; mix well.
  8. Season with salt and pepper.
  9. Stuff each mushroom cap with the mixture.
  10. Place stuffed mushrooms on a baking sheet and bake for 20 minutes.
