Ingredients

- 12 large mushrooms
- 1 cup spinach, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1/4 cup nutritional yeast
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- Chop the mushroom stems and set aside.
- Heat olive oil in a pan over medium heat.
- Add onion, bell peppers, and garlic; sauté until soft.
- Add chopped mushroom stems and spinach; cook until spinach wilts.
- Stir in breadcrumbs and nutritional yeast; mix well.
- Season with salt and pepper.
- Stuff each mushroom cap with the mixture.
- Place stuffed mushrooms on a baking sheet and bake for 20 minutes.
