  • Rice paper wrappers – 10 sheets
  • Rice noodles – 1 cup
  • Carrots – 1 cup, julienned
  • Cucumber – 1 cup, julienned
  • Red bell pepper – 1 cup, julienned
  • Avocado – 1, sliced
  • Fresh mint – 1/2 cup
  • Fresh cilantro – 1/2 cup
  • Lettuce – 1 cup, leaves separated
  • Peanut sauce – for dipping

Instructions

  1. Cook rice noodles according to package instructions and set aside.
  2. Prepare all vegetables by cutting them into thin strips.
  3. Fill a large bowl with warm water.
  4. Soak one rice paper wrapper in warm water for about 10-15 seconds until soft.
  5. Lay the softened wrapper on a flat surface.
  6. Place a small amount of noodles, vegetables, and herbs in the center of the wrapper.
  7. Fold the sides over the filling and roll tightly from the bottom to the top.
  8. Repeat with remaining wrappers and filling.
  9. Serve with peanut sauce for dipping.
