A refreshing and healthy vegan summer rolls recipe that is gluten-free.
Ingredients
- Rice paper wrappers – 10 sheets
- Rice noodles – 1 cup
- Carrots – 1 cup, julienned
- Cucumber – 1 cup, julienned
- Red bell pepper – 1 cup, julienned
- Avocado – 1, sliced
- Fresh mint – 1/2 cup
- Fresh cilantro – 1/2 cup
- Lettuce – 1 cup, leaves separated
- Peanut sauce – for dipping
Instructions
- Cook rice noodles according to package instructions and set aside.
- Prepare all vegetables by cutting them into thin strips.
- Fill a large bowl with warm water.
- Soak one rice paper wrapper in warm water for about 10-15 seconds until soft.
- Lay the softened wrapper on a flat surface.
- Place a small amount of noodles, vegetables, and herbs in the center of the wrapper.
- Fold the sides over the filling and roll tightly from the bottom to the top.
- Repeat with remaining wrappers and filling.
- Serve with peanut sauce for dipping.
Notes
- Make sure the rice paper wrappers are fully submerged in water before using.
- Feel free to customize the filling with your favorite vegetables.
- Store rolls in an airtight container in the refrigerator for up to 2 days.
