Ingredients

- 1 cup chickpeas, drained and rinsed
- 1/2 cup tahini
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon cumin
- Salt to taste
- 1/2 cup fresh parsley, chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 bag tortilla chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, combine chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and salt. Blend until smooth.
- Transfer the mixture to a bowl and stir in parsley.
- In a separate bowl, mix diced avocado and cherry tomatoes.
- Serve the chickpea dip with tortilla chips and top with avocado-tomato mixture.
