Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 sheets nori
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1 carrot, julienned
  • Soy sauce for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine sushi rice and water in a pot. Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
  3. Remove from heat and let it sit covered for 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir into the rice.
  5. Place a sheet of nori on a bamboo mat, shiny side down.
  6. Spread a thin layer of rice on the nori, leaving a 1-inch border at the top.
  7. Arrange cucumber, avocado, and carrot in a line across the rice.
  8. Roll the sushi tightly from the bottom to the top border. Wet the edge of the nori to seal.
  9. Slice the roll into bite-sized pieces.
  10. Serve with soy sauce.
