A simple vegan sushi recipe that is fresh and flavorful.
Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 sheets nori
- 1 cucumber, julienned
- 1 avocado, sliced
- 1 carrot, julienned
- Soy sauce for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine sushi rice and water in a pot. Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
- Remove from heat and let it sit covered for 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir into the rice.
- Place a sheet of nori on a bamboo mat, shiny side down.
- Spread a thin layer of rice on the nori, leaving a 1-inch border at the top.
- Arrange cucumber, avocado, and carrot in a line across the rice.
- Roll the sushi tightly from the bottom to the top border. Wet the edge of the nori to seal.
- Slice the roll into bite-sized pieces.
- Serve with soy sauce.

- Serve sushi fresh for the best flavor.
- Feel free to add other vegetables like bell peppers or radishes.
