- 1 cup gluten-free flour
- 1/2 cup cocoa powder
- 1/2 cup coconut sugar
- 1/4 cup maple syrup
- 1/2 cup almond milk
- 1/4 cup coconut oil
- 1 teaspoon baking powder
- 1 teaspoon ginger powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup vegan mascarpone cheese
- 1/2 cup brewed coffee
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, cocoa powder, coconut sugar, baking powder, ginger powder, cinnamon, and salt.
- Add maple syrup, almond milk, coconut oil, and vanilla extract. Mix well.
- Pour the batter into a greased baking pan and bake for 25-30 minutes.
- Let the brownies cool completely.
- Once cooled, layer the brownies with vegan mascarpone cheese and brewed coffee.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- Store leftovers in an airtight container in the fridge.
- Adjust sweetness according to your taste.
- Can substitute maple syrup with agave syrup if desired.
