- 1 avocado, diced

Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff the quinoa with a fork.
- In a large bowl, combine quinoa, cherry tomatoes, avocado, and basil.
- Drizzle with olive oil and season with salt and pepper.
- Toss gently to combine.
- Serve immediately or chill in the refrigerator.
