A delicious Veggie & Cheese Quesadilla Dinner packed with flavor.
Ingredients

- 4 flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 bell pepper, diced
- 1 cup spinach, chopped
- 1 small onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add spinach and cook until wilted.
- Season with salt and pepper.
- Place a tortilla in the skillet, add cheese and veggie mixture on one half.
- Fold the tortilla and cook until golden brown on both sides.
- Repeat with remaining tortillas.
- Cut into wedges and serve hot.
Notes
- Feel free to add other veggies like mushrooms or zucchini.
- Serve with salsa or guacamole.
