Ingredients

- 1 cup grated zucchini
- 1 cup grated carrots
- 1/2 cup chopped bell pepper
- 1/4 cup chopped onion
- 2 eggs
- 1/2 cup gluten free flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/4 cup olive oil for frying
Instructions
- Grate the zucchini and carrots, then squeeze out excess moisture.
- In a bowl, combine all the chopped vegetables and mix well.
- Add the eggs, gluten free flour, salt, pepper, and garlic powder to the bowl.
- Mix until the ingredients are well combined.
- Heat olive oil in a pan over medium heat.
- Spoon the mixture into the pan, forming fritters.
- Cook for 3-4 minutes on each side until golden brown.
- Remove from pan and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- Adjust the seasoning as per your taste.
- You can add other veggies as desired.
- Store leftovers in the fridge for up to 3 days.
