  • 1/4 cup olive oil for frying

Instructions

  1. Grate the zucchini and carrots, then squeeze out excess moisture.
  2. In a bowl, combine all the chopped vegetables and mix well.
  3. Add the eggs, gluten free flour, salt, pepper, and garlic powder to the bowl.
  4. Mix until the ingredients are well combined.
  5. Heat olive oil in a pan over medium heat.
