A simple and flavorful veggie pasta sauce.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, grated
- 1 zucchini, chopped
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, and sauté until soft.
- Add bell pepper and carrots, cook for 5 minutes.
- Add zucchini, crushed tomatoes, oregano, and basil.
- Simmer for 20 minutes, stirring occasionally.
- Season with salt and pepper.
Notes
- Use fresh vegetables for better flavor.
- Serve over your choice of pasta.
- Store leftovers in the fridge for up to 3 days.
