Ingredients

Instructions

  1. Cook the brown rice according to package instructions.
  2. Let the rice cool slightly and mix in rice vinegar.
  3. Lay a sheet of nori on a bamboo mat.
  4. Spread a thin layer of brown rice on the nori.
  5. Add cucumber, carrot, avocado, and bell pepper in a line across the rice.
  6. Roll the sushi tightly using the bamboo mat.
  7. Slice the roll into 6-8 pieces.
  8. Repeat with remaining ingredients.
  9. Serve with soy sauce, wasabi, and pickled ginger.
