- 1 cup boiling water
- 1 teaspoon baking soda
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine chopped dates and boiling water. Stir in baking soda and let it cool.
- In a mixing bowl, cream butter and brown sugar until smooth.
- Add eggs and vanilla extract to the butter mixture and mix well.
- In another bowl, combine flour, ginger, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- Fold in the date mixture.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
