Ingredients

- 200g rice noodles
- 1 cup cucumber, julienned
- 1 cup carrots, julienned
- 1 cup red bell pepper, sliced
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup roasted peanuts, chopped
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 clove garlic, minced
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a bowl, combine fish sauce, lime juice, sugar, and minced garlic.
- In a large bowl, mix noodles, cucumber, carrots, red bell pepper, mint, and cilantro.
- Drizzle the dressing over the salad and toss to combine.
- Top with chopped peanuts before serving.
