Description
A moist and flavorful bread made with dates, perfect for tea time.
Ingredients
Scale
- 1 cup (150 g) pitted dates, chopped
- 1 cup (240 ml) boiling water
- 1 teaspoon baking soda
- 1/2 cup (100 g) unsalted butter, softened
- 1 cup (200 g) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190 g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup (75 g) walnuts or pecans, chopped (optional)
Instructions
- In a medium bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 10-15 minutes to soften the dates.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.
- In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the butter mixture, mixing just until combined.
- Fold in the date mixture, including any liquid, and the chopped nuts if using.
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan or line it with parchment paper.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for about 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Slice and serve warm or at room temperature.
Notes
- Consider soaking the dates in rum or orange juice for added flavor.
- This bread can be stored in an airtight container at room temperature for up to a week.
- Feel free to experiment with spices like ginger or allspice.
