  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup (75 g) walnuts or pecans, chopped (optional)

Instructions

  1. In a medium bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 10-15 minutes to soften the dates.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  6. Fold in the date mixture, including any liquid, and the chopped nuts if using.
  7. Preheat your oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan or line it with parchment paper.
  8. Pour the batter into the prepared loaf pan and smooth the top. Bake for about 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  10. Slice and serve warm or at room temperature.
