A simple and delicious walking taco casserole that combines the flavors of a taco in a convenient casserole form.
Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can diced tomatoes
- 2 cups tortilla chips
- 2 cups shredded cheese
- 1/2 cup sour cream
- 1/4 cup sliced jalapeños (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat.
- Stir in the taco seasoning, black beans, corn, and diced tomatoes.
- In a baking dish, layer half of the tortilla chips, followed by half of the beef mixture, and half of the cheese.
- Repeat the layers with the remaining chips, beef mixture, and cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Top with sour cream and jalapeños before serving.
Notes
- This dish can be made ahead of time and baked when ready to serve.
- Customize toppings as per your preference.
