Description

Ingredients

  • 1 cup (240ml) boiling water
  • 1 tsp baking soda
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup (60g) chopped walnuts, toasted
  • 1/4 cup (60g) unsalted butter
  • 1/3 cup (65g) sugar
  • 1/4 cup (60ml) fresh orange juice
  • Zest of 1 orange

Instructions

  1. Prep the ingredients by soaking chopped dates in boiling water.
  2. Cream together softened butter and light brown sugar until fluffy, then add eggs and vanilla.
  3. In a separate bowl, whisk together dry ingredients and fold into the wet mixture, alternating with mashed dates.
  4. Stir in toasted walnuts and pour the batter into a prepared cake tin.
  5. Bake in a preheated oven at 350°F (175°C) for 40-45 minutes.
  6. Prepare the orange glaze by melting butter and mixing in sugar, orange juice, and zest until thickened.
  7. Glaze the warm cake and let it cool completely on a wire rack.
