A hearty white bean and ham hock soup that warms you up.


Ingredients

  • 1 pound white beans, soaked overnight
  • 2 ham hocks
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In a large pot, sauté onions, carrots, and celery until soft.
  3. Add garlic and cook for another minute.
  4. Add ham hocks, beans, broth, bay leaf, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  6. Remove ham hocks, shred the meat, and return it to the pot.
  7. Season with salt and pepper. Serve hot.

  • Use smoked ham hocks for more flavor.
