Delicious white chicken chili enchiladas with creamy sauce.

- 2 cups shredded cooked chicken
- 1 cup white beans, rinsed and drained
- 1 cup corn
- 1 cup sour cream
- 1 cup shredded cheese
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 flour tortillas
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic; sauté until soft.
- Stir in chicken, beans, corn, sour cream, cumin, and chili powder.
- Fill tortillas with the mixture and roll them up.
- Place enchiladas in a baking dish.
- Pour chicken broth over the enchiladas.
- Top with shredded cheese.
- Bake for 25 minutes until cheese is melted.
- Serve hot.
Notes
- You can use rotisserie chicken for convenience.
- Top with fresh cilantro for extra flavor.
- Adjust spices to your taste.
