Ingredients

  • 1 cup white beans, rinsed and drained
  • 1 cup corn
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 flour tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add onion and garlic; sauté until soft.
  4. Stir in chicken, beans, corn, sour cream, cumin, and chili powder.
  5. Fill tortillas with the mixture and roll them up.
  6. Place enchiladas in a baking dish.
  7. Pour chicken broth over the enchiladas.
  8. Top with shredded cheese.
  9. Bake for 25 minutes until cheese is melted.
  10. Serve hot.
