Ingredients

  • 1 lb boneless chicken breast
  • 2 medium sweet potatoes, diced
  • 1 can white beans, drained
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn, frozen or fresh
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add diced sweet potatoes and cook for 5 minutes.
  3. Add chicken breast and cook until browned.
  4. Pour in chicken broth and bring to a boil.
  5. Add beans, corn, cumin, chili powder, salt, and pepper.
  6. Simmer for 20-25 minutes until sweet potatoes are tender.
  7. Shred the chicken and return to the pot.
  8. Stir in cilantro before serving.
