Ingredients

  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown the ground turkey over medium heat.
  2. Add the chopped onion and minced garlic. Cook until soft.
  3. Stir in the cumin and oregano. Cook for 1 minute.
  4. Add the beans, green chilies, corn, and chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
