- 1 cup wild rice
- 1/2 cup dried cranberries
- 2 cups vegetable broth
- 1/4 cup chopped pecans
- 1/4 cup diced onion
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Rinse the wild rice under cold water.
- In a saucepan, heat olive oil and sauté the onion until translucent.
- Add the wild rice and vegetable broth to the pan.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in dried cranberries and chopped pecans.
- Season with salt and serve warm.
