- 2 cups carrots, sliced
- 2 cups parsnips, sliced
- 2 cups turnips, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the carrots, parsnips, and turnips.
- In a large bowl, combine the veggies with olive oil, salt, pepper, and thyme.
- Toss until well coated.
- Spread the mixture on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender and golden.
- Serve warm.
