Zucchilattas are savory stuffed zucchini rolls filled with cheese and herbs.
Ingredients

- 4 medium zucchinis
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
- 1 cup marinara sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise and scoop out the seeds.
- In a bowl, mix ricotta, mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper.
- Fill each zucchini half with the cheese mixture.
- Place the filled zucchinis in a baking dish.
- Pour marinara sauce over the zucchinis.
- Bake for 25-30 minutes until the zucchinis are tender.
Notes
- For extra flavor, add chopped fresh herbs.
- Serve with crusty bread.
- Can be made ahead and reheated.
