Ingredients

- 2 medium zucchinis
- 1 pound chicken breast, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cauliflower florets
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Spiralize the zucchinis to create noodles.
- In a skillet, heat olive oil over medium heat.
- Add garlic and sauté for 1 minute.
- Add chicken and cook until no longer pink.
- Steam cauliflower until soft, then blend with chicken broth until smooth.
- Stir in Parmesan cheese and season with salt and pepper.
- Add zucchini noodles to the skillet and toss to combine.
- Serve warm.

- You can use a spiralizer or a julienne peeler for zucchini noodles.
- Substitute chicken with shrimp for a different protein option.
