Ingredients

- 2 medium zucchinis, spiralized
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add bell pepper, carrot, and broccoli, stir-fry for 5 minutes.
- Add zucchini noodles and soy sauce, toss to combine.
- Cook for an additional 3-4 minutes until zucchini is tender.
- Season with salt and pepper, serve hot.
Notes
- For added protein, include tofu or chicken.
- You can substitute soy sauce with tamari for a gluten-free option.
- Adjust the vegetables based on your preference.
