A healthy twist on classic lasagna using zucchini and turkey.
Ingredients

- 3 medium zucchini, sliced
- 1 pound ground turkey
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchini thinly and set aside.
- In a skillet, cook the ground turkey until browned.
- Add marinara sauce and simmer for 5 minutes.
- In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper.
- In a baking dish, layer zucchini slices, turkey mixture, and ricotta mixture.
- Repeat layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
- Bake for 30-35 minutes or until cheese is bubbly.
- Let it cool for 10 minutes before serving.
Notes
- Use a mandoline for even zucchini slices.
- Let excess moisture drain from zucchini before layering.
- Can add spinach for extra nutrition.
