Description
Zuppa Toscana is a hearty Italian soup made with sausage, potatoes, and greens.
Ingredients

- 1 lb turkey or chicken sausage
- 4 large potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale, chopped
- Salt and pepper to taste
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add the onion and garlic, and sauté until soft.
- Stir in the diced potatoes and chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add the kale and cook for an additional 5 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot.
