Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and line the bottom with parchment paper for easy removal.
  2. In a small saucepan over medium heat, combine the brown sugar and water. Stir until the sugar dissolves and the mixture begins to bubble. Remove from heat and let it cool slightly. Arrange the apricot halves, cut side down, in a circular pattern at the bottom of the prepared cake pan.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
