- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the berries gently.
- Divide the batter into a cupcake pan lined with paper liners.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Frost the cooled cupcakes with whipped cream and top with additional berries.

- Store cupcakes in the refrigerator.
- Use any berries of your choice.
- For a sweeter frosting, adjust powdered sugar to taste.
