- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh blueberries
- 1 tablespoon cornstarch
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each.
- Pour the cream cheese mixture over the crust.
- In a separate bowl, toss blueberries with cornstarch.
- Spread blueberries over the cheesecake mixture.
- In a small bowl, mix oats, brown sugar, and cinnamon.
- Sprinkle oat mixture over the blueberries.
- Bake for 50-60 minutes until set.
- Cool and refrigerate for at least 4 hours before serving.

- Use fresh blueberries for best flavor.
- Adjust sugar based on sweetness preference.
- Let cheesecake cool completely before refrigerating.
