Description
A creamy and cheesy soup made with fresh broccoli and cheddar cheese.
Ingredients

- 2 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
Instructions
- Melt butter in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in flour and cook for 1 minute.
- Add vegetable broth slowly, stirring to avoid lumps.
- Bring to a boil, add broccoli, and cook until tender.
- Reduce heat, stir in milk and cheese until melted.
- Season with salt and pepper.
- Serve warm.
Notes
- For a thicker soup, blend part of the mixture.
- You can use frozen broccoli if fresh is unavailable.
- Adjust cheese amount based on preference.
