- 2 cups orzo pasta
- 1 pound chicken breast, diced
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
- Cook the orzo according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken and Cajun seasoning. Cook until the chicken is browned.
- Add the onion, bell pepper, and garlic. Sauté until the vegetables are tender.
- Pour in the chicken broth and bring to a simmer.
- Add the cooked orzo and cherry tomatoes. Stir to combine.
- Season with salt and pepper. Cook for an additional 5 minutes.
- Serve hot.

- Adjust the spice level by varying the amount of Cajun seasoning.
