- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine chicken, bell pepper, onion, black beans, corn, salsa, chili powder, cumin, salt, and pepper.
- Spread the mixture in a greased casserole dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until heated through and cheese is melted.
- Let it cool slightly before serving.
