Ingredients

- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried thyme
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground chicken, breadcrumbs, onion, bell pepper, garlic, ketchup, egg, salt, pepper, and thyme.
- Mix until well combined.
- Shape the mixture into a loaf and place it in a baking dish.
- Spread additional ketchup on top of the meatloaf.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10 minutes before slicing.
Notes
- Serve with mashed potatoes or vegetables.
- Store leftovers in the refrigerator for up to 3 days.
- You can freeze the meatloaf for later use.
