Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in garlic powder, onion powder, salt, and pepper.
  4. Add rice and stir for 1 minute.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes.
  7. Add mixed vegetables and cook for an additional 5 minutes.
  8. Remove from heat and let sit for 5 minutes before serving.
