A comforting chicken tortellini soup that is hearty and flavorful.
Ingredients

- 2 cups cooked chicken, shredded
- 1 package cheese tortellini (about 9 ounces)
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups spinach, chopped
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Add garlic, thyme, and oregano. Cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add tortellini and cook according to package instructions.
- Stir in shredded chicken and spinach. Cook until heated through.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can use leftover roast chicken for this recipe.
- Feel free to add other vegetables like peas or corn.
- Store leftovers in the refrigerator for up to 3 days.
