A simple and delicious chicken zucchini bake for a wholesome meal.
Ingredients

- 2 cups diced chicken breast
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine chicken, zucchini, tomatoes, garlic, olive oil, Italian seasoning, salt, and pepper.
- Mix well to coat all ingredients.
- Transfer the mixture to a baking dish.
- Top with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes or until chicken is cooked through and cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- Serve with a side salad for a complete meal.
- Can substitute chicken with turkey or tofu for a different protein.
- Store leftovers in the refrigerator for up to 3 days.
