Instructions
- Cook rigatoni according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add fresh spinach and cook until wilted.
- Mix in cottage cheese and Parmesan cheese.
- Add cooked rigatoni to the skillet and stir until combined.
- Season with salt and pepper to taste.
- Serve hot.
