Ingredients

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 8 ounces egg noodles
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Place the beef chuck roast in the crockpot.
  2. Add chopped onion, minced garlic, beef broth, salt, and pepper.
  3. Add carrots and celery.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Remove the beef and shred it.
  6. Return the shredded beef to the crockpot.
  7. Add egg noodles and cook for an additional 30 minutes on high.
  8. Mix cornstarch and water, stir into the crockpot to thicken.
