- 1 pound chicken breast, diced
- 1 pound smoked sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup chicken broth
- 2 cups uncooked rice
- 2 tablespoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a crockpot, combine chicken, sausage, onion, bell pepper, celery, and garlic.
- Add diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, add shrimp and stir.
- Serve hot and enjoy.
Notes
- Adjust spices to your taste.
- You can add other vegetables like okra or corn.
- Leftovers can be stored in the fridge for up to 3 days.
