Description
A refreshing and crunchy slaw made with cucumbers and chickpeas.
Ingredients

- 2 cups cucumbers, thinly sliced
- 1 cup canned chickpeas, drained and rinsed
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine cucumbers, chickpeas, red onion, and parsley.
- In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the slaw and toss to combine.
- Let it sit for 10 minutes before serving to allow flavors to meld.
