  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 100 ml (about 1/2 cup) milk

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a small bowl, soak the chopped dates in hot water for about 10 minutes to soften them. Drain and set aside.
  3. In a large mixing bowl, use an electric mixer to cream the softened butter and brown sugar together until light and fluffy, about 3-5 minutes.
  4. Mix in the honey and then add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined. Gently fold in the soaked dates.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
