- 200 grams (about 1 cup) pitted dates, chopped
- 150 grams (3/4 cup) unsalted butter, softened
- 150 grams (3/4 cup) brown sugar
- 100 grams (1/2 cup) honey
- 2 large eggs
- 200 grams (1 1/2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 100 ml (about 1/2 cup) milk
Instructions
- Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a small bowl, soak the chopped dates in hot water for about 10 minutes to soften them. Drain and set aside.
- In a large mixing bowl, use an electric mixer to cream the softened butter and brown sugar together until light and fluffy, about 3-5 minutes.
- Mix in the honey and then add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined. Gently fold in the soaked dates.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
- Slice the cake and serve it on a plate. This cake pairs wonderfully with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy the rich flavors of dates and honey in every bite!
