Ingredients
Scale
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup kale, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1 avocado, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a bowl, combine kale, tomatoes, cucumber, red onion, and avocado.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the quinoa to the vegetable mixture.
- Pour the dressing over the bowl and toss gently.
- Serve immediately or refrigerate for later.
Notes
- Feel free to add your favorite vegetables.
- Can be served warm or cold.
- Store leftovers in the fridge for up to 3 days.
