Ingredients

Scale
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup kale, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a bowl, combine kale, tomatoes, cucumber, red onion, and avocado.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Add the quinoa to the vegetable mixture.
  8. Pour the dressing over the bowl and toss gently.
  9. Serve immediately or refrigerate for later.

  • Feel free to add your favorite vegetables.
  • Can be served warm or cold.
  • Store leftovers in the fridge for up to 3 days.
