A classic French dessert with a tangy lemon filling and a crisp pastry crust.
Ingredients

- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 2 tablespoons ice water
- 1 cup granulated sugar
- 3 large eggs
- 2 large egg whites
- 3/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour and powdered sugar.
- Add cold butter and mix until crumbly.
- Stir in egg yolk and ice water until dough forms.
- Roll out the dough and fit it into a tart pan.
- Bake the crust for 15-20 minutes until golden.
- In another bowl, whisk together granulated sugar, eggs, egg whites, lemon juice, and lemon zest.
- Pour the lemon mixture into the baked crust.
- Bake for another 20-25 minutes until set.
- Allow to cool before serving.
Notes
- Serve with whipped cream or fresh berries.
- Store leftovers in the refrigerator.
- Can be made a day in advance.
