Description

A classic French dessert with a tangy lemon filling and a crisp pastry crust.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 large egg whites
  • 3/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour and powdered sugar.
  3. Add cold butter and mix until crumbly.
  4. Stir in egg yolk and ice water until dough forms.
  5. Roll out the dough and fit it into a tart pan.
  6. Bake the crust for 15-20 minutes until golden.
  7. In another bowl, whisk together granulated sugar, eggs, egg whites, lemon juice, and lemon zest.
  8. Pour the lemon mixture into the baked crust.
  9. Bake for another 20-25 minutes until set.
  10. Allow to cool before serving.

Notes

  • Serve with whipped cream or fresh berries.
  • Store leftovers in the refrigerator.
  • Can be made a day in advance.
