Description
A light and healthy soup made with fresh asparagus.
Ingredients

- 1 lb fresh asparagus, trimmed and cut into pieces
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté onions and garlic until soft.
- Add asparagus and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Purée the soup using an immersion blender.
- Stir in heavy cream and season with salt and pepper.
- Heat through and serve warm.

- Use fresh asparagus for best flavor.
- Adjust cream quantity for desired richness.
- Garnish with asparagus tips or croutons if desired.
