Description

Ginger Orange Spice Cake is a moist and flavorful dessert with warm spices and a zesty orange glaze.

Ingredients

  • All-purpose flour – 2 cups (240 grams)
  • Granulated sugar – 1 cup (200 grams)
  • Brown sugar – 1/2 cup (100 grams)
  • Baking powder – 2 teaspoons
  • Baking soda – 1 teaspoon
  • Ground ginger – 1 tablespoon
  • Ground cinnamon – 1 teaspoon
  • Ground nutmeg – 1/2 teaspoon
  • Salt – 1/2 teaspoon
  • Unsalted butter – 1/2 cup (113 grams), softened
  • Eggs – 2 large
  • Buttermilk – 1 cup (240 ml)
  • Fresh orange juice – 1/4 cup (60 ml)
  • Orange zest – 2 tablespoons
  • Fresh ginger – 1 tablespoon, grated
  • Powdered sugar (for glaze) – 1 cup (120 grams)
  • Fresh orange juice (for glaze) – 2-3 tablespoons
  • Orange zest (for glaze) – 1 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground ginger, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, beat the softened butter until creamy. Gradually add the sugars and continue to beat until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the buttermilk, fresh orange juice, orange zest, and grated ginger until fully combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  7. In a small bowl, whisk together the powdered sugar, 2 tablespoons of orange juice, and orange zest until smooth. If the glaze is too thick, add more orange juice, one teaspoon at a time, until you reach the desired consistency.
  8. Once the cake is completely cool, drizzle the orange glaze over the top, allowing it to drip down the sides.
  9. Slice the cake and serve it on a simple white plate. Enjoy the moist, flavorful cake with its warm spices and zesty orange glaze as a delightful dessert or afternoon treat.
