Ingredients

- 2 chicken breasts
- 1 cup quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions and set aside.
- Season chicken breasts with salt, pepper, and oregano.
- Grill or pan-fry chicken until cooked through, about 6-7 minutes per side.
- Let chicken rest, then slice into strips.
- In a bowl, combine cooked quinoa, cucumber, tomatoes, red onion, feta, and olives.
- Drizzle with olive oil and lemon juice, then toss to combine.
- Top the quinoa mixture with sliced chicken.
- Serve immediately.
